St Eadburgha is ladled by hand to produce a soft rapid maturing cheese
St Eadburgha is a white rinded cheese similar to some Camembert or Brie. The rind is developed by the growth of a penicillin and related moulds, which are sprayed onto the surface of the cheese when it is young, and as the cheese matures these help to develop and enhance its characteristic flavour As the cheese matures, the centre becomes softer and more creamy, and the flavour becomes stronger and more pungent, and the rind will gradually darken.
